It was good! And way more than 4 servings. Instead of mixing my own Cajun seasoning, I mixed 1 Tbsp each of Cajun and Creole seasoning and added 1/2 tsp smoked paprika. I added a Tbsp plain yogurt to the chicken breast chunks and 1/2 the seasoning mix to marinate for about 10 min. I used a 28oz can of roasted tomatoes. I also only used 1c broth and 1c water to make sure it wasn't too salty. Plus I added fresh broccoli during the last 5 min.
