Took a minute to get the hang of cooking these but even the early ones were yummy, just not as pretty. To get the best ones I followed the advice to refrigerate the dough some before cooking. I also put a little cooking spray on the parchment before rolling the dough out. I discovered I could put one in the pan with the parchment on the top and after 30 sec or so I could slide a thin spatula between the tortilla and paper for a flawless circle tortilla. These are a clever and tasty addition to a strict keto diet.
