I've wanted to make these for a while, and boy were they worth the wait. While I felt bad about the wasted potato from cutting them down, the outside was crispy and the inside was so tender. I was worried I'd burnt them, but they didn't taste like it. Paired them with scallops, candied bacon, and a carrot mash 🤤
