I kind of ran away with this recipe, so it feels a bit odd to rate it lol. I noticed that a lot of people were commenting that it's dry, so I decided to:
* not roast the tomatoes, I threw them in the pan with the mushrooms after they reduced a bit - I also used a beefy tomato in addition to the cherries
* used twice the amount of mushrooms (moreso because I needed to use them up, but it was a good move)
* added another tbsp of oil and a little extra pasta water
* the herbs I used were lemon basil and chives
It was good & I'd make it again! Seems like a good meal prep, I'll probably add a bit of (vegan) butter or milk to revive it after fridging.
Edit: it did not need reviving - it kept perfectly in the fridge and was a great meal prep!
