Excellent! I didn't have any celery so I skipped it and threw in a little extra spinach. Also didn't have parmesan nor half and half, so improvisation! I mixed about 1/4 cup of hot broth with a 1 cup of non fat yogurt (so the yogurt wouldn't separate when added to the pot of soup due to heat) then slowly folded it in. Topped with feta and it was delicious! Feta really goes with everything, tho 💫 so filling!
