I made this recipe in the Instant Pot and it was amazing! The flavors, of course, delicious, but the amount of time it took in that pressure cooker makes it more exciting. I did the exact same thing the recipe suggests except I put it on High Pressure for 15 minutes in the sealed position. I allowed it to Natural Release for a while because I was busy doing other things. Once I open it up, I tossed the spinach in and allowed the steam from pot wilt the spinach. Came out amazing. I’m considering adding green olive slices next time.
