Delicious. The meatball recipe was easy, with minimal fuss, and cooked up very quickly with the rice. Since I used tinned pineapple, I added a few extras to garnish, and it was very tasty. The meatballs are only slightly spicy, add more hot sauce if you prefer a touch more zing, or chop the jalapeño with the seeds included.
This makes four portions, though I only got 14 ice cream scoop sized meatballs with it. It could have use a little more breadcrumbs to help it not be such a wet meat mixture, too. It’s enough, however, for four light adult meals, but may require a side if it’s for four hungry adults!
