Delicious. The meatball recipe was easy, with minimal fuss, and cooked up very quickly with the rice. Since I used tinned pineapple, I added a few extras to garnish, and it was very tasty. The meatballs are only slightly spicy, add more hot sauce if you prefer. Touch more zing, or chop the jalapeño with the seeds included.
This makes four portions, though I only got 14 ice cream scoop sized meatballs with it. It could have use a little more breadcrumbs to help it not be such a wet meat mixture, too. It’s enough, however, for four light adult meals, but may require a side if it’s for four hungry adults!
