We absolutely loved this dish! It was juicy and perfectly done! We doubled the vegetables (except the mushrooms) and doubled all the spices (minus the chili powder - only did 1 and 1/4th teaspoon). We also substituted Italian seasoning for equal parts basil and oregano. We used 3ish tablespoons of oil. We cooked for 5 min at 200°C, then stirred and set it for another 5 min. Everything came out perfect. We had to do 3 batches for everything. We also made rice with some chopped garlic in it as a bed for this yummy dish. 10/10!
