I didn't have any bell pepper on hand so left that out. I also didn't have any tomato paste. I used a can of Rotel Mexican lime tomatoes and chiles instead. Also I never used coriander before and ended up using whole coriander seeds instead of ground coriander. Definitely use ground coriander the whole coriander gives it a weird texture like some of the rice is crunchy.
