I'm pretty sure this was user error - I'm going to try again and will update my review accordingly.
The taste is wonderful (I did add dried rosemary to the "batter") but it was insanely dry, mushy, and fell apart when I took it out of the pan. I think I needed a much larger sheet pan and I should have let it cook for longer. I'm going to try to pan fry the fragments to see if it's salvageable but as-is, it's non bene.
