I used mahi mahi, sprayed with Pam, sprinkled with salt, pepper, garlic, onion powder, and topped with a lemon slice. Then baked it on 400 for 15 minutes covered, and 2-3 uncovered. The peach salsa was the star of the show. I made it as directed with pickled jalapeño and no cilantro. This easily moved to a top 3 favorite summertime recipe.
