Changes I made -
Skipped the microwave step. Instead, I boiled water and dipped the peppers into it to blanch them.
I added many more seasonings.
Doubled the meat.
Tripled the garlic.
Used all the rice we had left in rice cooker, so I couldn't say how much of that. Probably came out to a bit more than the recipe said.
And due to personal preferences, only put cheese on half.
Overall,
It was pretty good. I would make it again. Even with sharp knives, I'm very slow at chopping. It was a lengthy prep work process for me. In the end, I'd say it was worth it.
