Makes a very good base. I added some Daiya mozzarella shreds and extra nooch to taste. Needs a good amount of salt, I also heavily peppered it because I like peppery alfredo! A bit of Italian seasoning and it was delicious! On a side note, I think with a little tweaking this recipe could make a fabulous white gravy base for use in "sausage" gravy.
Edit: After making several times, use cashew milk or almond milk. Soy milk adds too much sweetness. Have not tried oatmilk, but that would probably work too. Adding about 1tbsp of Italian seasoning, garlic and onion powder for more flavor.
