I will make this again but try 1.5x the recipe. And no skimping on the cilantro! Don't forget to season chicken with chili powder. It's not mentioned in the directions ~ Made again, so good. Used 1.5lbs chicken... Need to cook more than a cup of brown rice next time, maybe 1.5cups ~ Jan 2025: Liv made with nearly 2lbs chicken. served with 2 cups of white rice but I probably could've made even more. it was absolutely scrumptious
