Yum. I added some paprika to the spice mix. Don't go too crazy on the cumin. I didn't have foil when I made it, so I used a dish with a lid. That made it a little less moist, but it was still tender enough to shred nicely with a fork. The drippings made a pretty tasty gravy for mashed potatoes.
