This was good, but I did make some changes. Like everyone recommended, I used 1/4 cup of oil vs 1/2. I also used less than 1/4 cup of balsamic vinegar bc I didn't want the flavor to overpower it. I replaced the green beans with asparagus. I unintentionally left out the basil, but I'm glad I did...not a huge basil lover. And, i did use more salt than recommended, I doubled it using Kosher salt. I also cooked it for 20 minutes like others recommended and that was enough. I tried to get creative and added potatoes, but they were hard. I needed to preboil them first. Oh, I also added the whole bag of parmesan cheese. I felt it called for more. I wonder though if 425 degrees was too high. The asparagus that was on top burned a little, or maybe it should have all been under the meat. I put in the cheese in the final two minutes. Overall, this was still a really good, my family loved the meat. Served it w rice.
