With 5 medium zucchini, 2 eggs didn't seem like enough so I made it 4.  This worked well and made enough for 4 people (the alleged 14 servings is individual fritters, not enough for 14 people).  I used Bob's Red Mill 1:1 gluten-free flour and chickpea flour half & half for the flour.  I also added a lot more green onion, most of a bunch.  Served with Greek yogurt & sriracha.
