Hope this helps a little with amounts.
I browned chicken (about 2 chicken breasts) in olive oil and 2 cloves garlic. I then added salt and pepper and 1 tbsp of fresh oregano.
Once the chicken was browned, I added 2 diced tomatoes and 1 can of while pitted black olives. I used 2 frozen zucchini spirals instead of spaghetti squash because our store didn't have any. I should have cooked the zucchini in the package in the microwave and then added to chicken and tomatoes. I put them in frozen, and I had to cook down a lot of liquid. Topped with feta cheese.
