I definitely will add spinach in with the cheese after the oven baking. The spinach and sun dried tomatoes charred from the high heat of the oven. Next time I can try loosely covering with foil. Thanks to readers for 'add in' suggestions...eggplant, sun-dried tomato pesto, olives - yum. Even with the charring, this dish was delicious.
