I didn't make the sauce - I did a spicy duck dipping sauce instead - but the pork chop itself was beautiful! Only thing I did differently was not lowering the heat because I didn't have enough room in the skillet so did them in batches (3.5 to 4 minutes a side for room temperature, thin cut pork chops). They were delicious.
