This vegan chocolate ganache is a *game changer* - I had no idea full-fat coconut milk could be used the same as cream, but I am so glad to learn this! Made an espresso-chocolate tart with shop-bought shortcrust (not chocolate flavoured), and then infused the coconut milk as it heated with instant coffee before adding to the dark chocolate, with a dash of vanilla and then dusted with cocoa powder, and you'd never think this was vegan.
When I can find pomegranates next this recipe will be top of the list to try for a vegan crust to add to my repetoire!
