No-Bake Chocolate Cherry Tart

Christmas can be stressful, so why make it any more difficult? Kick off the silly season with this easy peasy no-bake chocolate cherry tart that will be a winner at Christmas lunch. It’s vegan, gluten-free and refined sugar-free, so will also cover many of the family's dietary requirements.

Base:
2.25 CupsAlmond Flour
0.33 CupCacao Powder
⅓ cupcoconut oil
melted
3 TbspRice Malt Syrup
1 tspvanilla extract

Instructions
Step 1
Grease a tart tin. Mix together all the base ingredients until a dough forms. Roll into a bowl and transfer to the tart tin. Press evenly and set aside in the fridge.
Step 2
Heat coconut milk and cherry juice over the stovetop in a small saucepan. Once boiling, remove from heat and add the chocolate. Whisk until the filling is smooth and fully melted.
Step 3
Pour the filling into the base, garnish with cherries and pomegranate seeds and set in the fridge for 2 - 4 hours.
Step 4
Slice, serve and enjoy! Store in the fridge for 4-5 days, or for longer in the freezer.
