If you're wondering if you can substitute almond butter for peanut butter for no-bake cookies, you can! As I was compiling ingredients, I remembered I had some almond butter that needed to be used up, and it just happened to be the exact amount the recipe calls for. I was worried the texture would be weird, but it was the same. The flavor was very slightly different, but not much. I probably wouldn't have noticed if I didn't know.
I made these the night before I drove 3 hours to meet up with my nephew as he through-hikes the Pacific Crest Trail. They were a welcome treat, and he thoroughly enjoyed them! I hiked about 4 miles with him while he tried to guess what I brought. They turned out to be a fantastic backpacking treat. We enjoyed some as an afternoon snack, an after dinner dessert, and a breakfast appetizer! 😂
