Wow!! This has gone straight up there among my favourite dinner recipes. It's delicious, healthy, easy, quick, crowd pleasing, and suitable for a range of dietary needs.
Will be making this many more times until everyone I know has tasted it. Being vegan and gluten free, it's also a great potluck offering. I actually even made this into a one pot recipe by using an immersion blender and making the sauce in the pot, then adding the beans and tomatoes and gently heating on the stove.
I can also see this sauce working really well with pasta, gnocchi, maybe even white fish?
