Used gluten free chickpea elbow noodles. Substituted the coconut milk with oat milk. I only used 1 cup of oat milk and added about 1/2 cup maybe a little more of beef broth, until I was satisfied with the thickness of the sauce. Taste is bland unless you add lots of garlic and some salt. I shredded cheddar cheese for my kids that can tolerate dairy and it was delicious!!
