Cooked a 2.75 # pork butt. Was completely done at 3 hours. Still cooked the roast an extra hour at 325°. For pork cuts under 3#, cook for 2 hours at 275° then uncover for one hour. Made 1/2 recipe of mojo.
Also note that sour oranges in the off season (August) are unripe and not very juicey, so buy many.
