Delicious, hearty, and comforting, made it with mushrooms instead of meat. Since the cashews and peas add some protein it still feels pretty balanced. The cashew cream is a bit of a pain but worth the extra blending to prevent the texture being too gritty. I used a sieve to make sure there weren't any large bits of cashew but it added time and effort and didn't seem necessary after extra blending. Saved a little time with some canned veggies.
