Pro tip: velvet your beef before cooking.
To do that, add about 3/4 teaspoon of baking soda per 7 Oz of beef. For a pound, I use about 2 tsp. Toss the beef in the baking soda. Let it sit for 30-35 minutes. Rinse the beef with water and then cook as instructed. It will make your beef tender, just like your favorite Chinese restaurant.
