This cake was very good, but deflated quite a lot once I let it cool and became fairly dense. I think it was because the peaches were extremely juicy and the cake started absorbing the juice. When I flipped it out, a lot of juice also came out. It was still very beautiful and went fast. I would try with the skin on next time as blanching the peaches is still a lot of work.
