It is quite nice, I believe the addition of vanilla extract adds a lot of flavor. I would recommend increasing the amount of sugar to make it taste sweeter or adding maple syrup to the bottom of the cup, which would also help with aesthetics. Also I prefer the tapioca pearls overcooked which means that I should have cooked them longer
A step from a different recipe that I have not tried yet and will update here when I do is this:
Sweeten the tapioca pearls: Add sweetener and stir the tapioca pearls. Let the pearls sit for about 5 minutes, allowing them to absorb the sweetener, stirring it a few times.
