I used this recipe as a base latke recipe because I couldn't find one on here that worked with simple instructions lol. No corn, but I did decide to put 2 small zucchini in with everything. I'm also not vegan, so used 2 eggs instead of the vegan sour cream. Turned out great all in all! My only complaint is that the recipe said to flip and wait until they got golden brown on top, but mine cooked from the bottom up... They were already brown 'on top' once flipped. They started to smell burnt, so I only did 5 minutes on the other side and had one side crunchier than the other (still tasted great). Made 12!
