My husband doesn't really like fish but liked this because of the "sauce". I made this using 24 ounces of frozen mahi mahi that I brushed with butter & grated fresh garlic. I grilled the fish. My variation: I did not add salt at any point in this recipe. For the spinach red pepper mixture.my husband agreed with others that mushrooms would be addition so I cooked sliced baby bella mushrooms separately and added them to the "sauce" after it was completed. I added 4T total of fresh grated Parmesan instead of 3T. I used 9 ounces of regular fresh spinach not baby spinach. Next time I plan to make 1.5 times the "sauce". I also would like to try a softer fish like rockfish. I wondered what to serve this with & thought about roasting zucchini or using white quinoa that I had already made but my husband didn't think it needed a side.
