I’ve made this a couple of times, once as written and once off script - both very yummy.
Off script: First, I doubled the recipe.I didn’t have squash, but I did have a bag of frozen peas and a bag of frozen asparagus. I thawed both, chopped the asparagus in little pieces and added all this veg to the instant pot with the risotto. It was very good and the kids gobbled it up, even the somewhat picky eater who tries to avoid veg.
