I mixed all of the ingredients, except the meat- in a bowl then heated in a skillet until apples began to soften.
I used a pork loin- fishtail cut. Placed on piece of pork on bottom of baking dish, topped with apple mixture, then topped with second loin. Brushed additional ground mustard on top of loin.
Bake at 350
Sauce- 1c df half and half (almond & oatmilk), 1 tblsp stone ground mustard, pinch rosemary and Parmesan cheese. Add cornstarch to thicken.
Served with candied butternut squash
