Stuffed Pork Loin

I like it.. just need to figure out how to make it more juicy.. it is too dry

I mixed all of the ingredients, except the meat- in a bowl then heated in a skillet until apples began to soften. I used a pork loin- fishtail cut. Placed on piece of pork on bottom of baking dish, topped with apple mixture, then topped with second loin. Brushed additional ground mustard on top of loin. Bake at 350 Sauce- 1c df half and half (almond & oatmilk), 1 tblsp stone ground mustard, pinch rosemary and Parmesan cheese. Add cornstarch to thicken. Served with candied butternut squash

It was soon amazing. It was delicious and flavorful. I don't like pecans, so I omitted them. I had a smaller tenderloin, so I only cooked it for an hour and used 1 apple, but AMAZING!! You'll definitely say "Oh My God" with the first bite.

I added a block of cream cheese then the spinach. Mozzarella cheese on top of that. Sauted an onion and 4 garlic cloves in 1/2 cup of beef broth until tender. About 20 minutes. Put that on the cheese and tied with twine. Put about 2 T of oil in a pan and browned roast on all 4 sides for about 5 minutes each side. Put in 400 degree oven for 30 minutes. It was a hit!!!

I altered the recipe for a 2lb roast. It was good, I still think a sauce would be like the icing on top. we still have leftovers so I’m gonna try. Rosemary infused cream sauce. Heavy cream, Parmesan, a little Dijon mustard, garlic and other seasonings should do it. Probably don’t need a lot of it, but a drizzle would be fantastic.
