Mad tasty, made special variations - used olive oil, thyme, oregano lemon and some gyro spice mix (we love it in this house, perfect with any chicken) to coat the the thighs, used Bay leaf Onion, Red Bell Peppers, Lemon Slices and Garlic Cloves as aromatics.
Pan wasn't big enough for the potatoes so I've done those separate in the style of Papas Arrugadas (Canarian Potatoes) to go as a side dish, tossed up with the roasted veg.
Cooked main dish at 175c for 30 min then 165c for 20 mins.
Made for two, so leftover chicken and veg is going into cous cous stuffed peppers tomorrow.
