Didn't have ricotta or courgette, so substituted with cottage cheese and veggies that I did have on hand at the time (leek, celery, bok choy). I also added some pepperoni slices on top before putting the dish in the oven. Came out very tasty! Would recommend using less pasta water though, maybe half of what the recipe calls for... came out quite watery, but it could also be due to the ingredients I used. Very versatile recipe though!
