Husband liked it. The fresh boneless skinless chicken breasts available in our area are very large (@ 1 lb + each) so I pounded them to @ 1/2 inch and then cut into smaller pieces. I seasoned them with McCormick California Style Garlic Pepper. My husband prefers to grill chicken rather than cook on the stove so he cooked the chicken on the grill. I cooked the remaining ingredients on the stovetop. I used 2 pints of grape tomatoes & a block of part skim mozzarella that I cut into small cubes. We like cheese so I used 7 ounces. It didn't seem to be too much but next time I will try shredding the mozzarella for better distribution & to make it easier to eat. After tomatoes had cooked I sprinkled with the cheese & basil a covered to allow the cheese to melt. We then plated tomato mixture first, chicken next, drizzled with balsamic glaze and sprinkled with sliced black.olives (we put them on caprese salad as well). The balsamic glaze did take longer than 15 on low over gas flame to reduce.
