Added one poblano, no jalapeños. Two bell peppers and doubled the spinach. I did not add tortillas into the casserole and instead served the casserole as a soft taco filling. Used 1 can green enchilada sauce and a bit of salsa; just mixed everything together in a big bowl and then put in casserole dish and bake at 400 for 40 mins then add cheese on top and bake until squash is tender and cheese is melty.
