I feel like this has potential. I did use boneless/skinless thighs as that's what I had. A few things:
- the recipe calls for juice of two lemons, which I did. I found because of this there was a lot of liquid in the pan.
- flavor was okay - might have been nice if the veggies had a slightly different flavor than the chicken.
- I think this could have used a sauce of some sort.
- cooking time was reasonable. Easy prep.
