Unfortunately, this dish was bland. The only seasoning was salt and pepper, and a curious lemon zest. I was intrigued by the combination of vegetables so I decided to make this, even though I did foresee the recipe was lacking seasonings. I followed the steps to the letter just in case the lemon juice and zest surprised me, and maybe brought out a level of flavor I wasn’t expecting, but sadly no. This needs double the amount of onion, plus add some minced garlic in the mix, a generous amount of garlic salt and onion powder, maybe some chili powder for those chickpeas too, and basically create a new recipe using this as a base. Or just roast tomatoes and feta in a baking dish on their own so the juices are contained to add flavor, then combine the two baked dishes together and serve with a starch? I was just so disappointed with this.
