Turned out pretty dang good! I split the flour into 1.5 cups of Oat flour and 1 cup AP baking flour, and I love the texture. I also did it in a food processor with no issues. It's moist, has a touch of sweetness, decent crust. I probably could've baked it a bit longer (did the Paul Hollywood poke and it didn't fully spring back), but I think it'll make great slicing sandwich bread after I freeze it!
