If you didn't pat dry your chicken cutlets before you put the coating. That will help keep the coating stick to the meat

thanks Mickie yes you're absolutely right. that is something I skipped. definitely going to try this & I'm sure I'll get a better result.

Mine did the same, the next time I made it I just skipped the 'flour' step and it was perfect.
