Pretty good, changed a good amount of the recipe. Doubled the chicken and seasoned both sides with cumin, garlic powder, turmeric, Lawrys, minced onion, black pepper before frying, and then when I added the coconut milk (reduced fat worked fine) I also added a cup of white rice and 1.5tbsp of minced ginger. Used double the chicken broth. It was really good that way I think following the recipe exactly would’ve been bland. Also the rice mixture could use one more veggie, the sweet potato was good but it wasn’t super texturally interesting.
