Looked up a recipe for orange chicken using orange marmalade because I had a jar of super yummy (and spicy) kumquat Carolina reaper jam to use up. The sauce was way too salty for my taste, but I added some brown sugar and extra vinegar to balance it out, and it turned out perfect. I also omitted the optional chili flakes since the jam was already spicy (I usually add extra because I love spice). This was super fast and easy, super delicious, and will be making its way straight into my regular rotation. I guess I better find some more of that jam and stock up!
