I loved the idea of this one but felt it needed a little something extra as it sounded quite bland.
So I added a few sundried tomatoes, half a green and half a red pepper thinly sliced, a few sliced baby portobello then added a few olives at the end, I also rubbed the cod with smoked paprika and a little salt before placing them into the stew. And finally sprinkled with a little parmesan. It turned out great, and picky hubby actually enjoyed it too, though he was nervous as he doesn't like chowder. I will try it again in the future with less water and maybe more sundried tomatoes and more parmesan through it or could maybe try it with chilli flakes. Overall, it wasn't bad at all with my tweaks, though I'm certain it'll be even better next timeπππ
