That pinch of cayenne does some heavy lifting. It doesn't make anything spicy, it just amps up the flavor a little bit and adds a little touch of brightness. You could make this vegan with some substitutions, and no one would ever know or care, but you could also take it in a more omnivorous direction with chicken stock. I like vegetarian proteins, so I might be inclined to add some silken tofu because I enjoy the texture and that would make it a full meal, but I might serve it with a simple broiled tofu main for a satisfying dinner.
