Pretty good, but I was hoping for better! It didn’t thicken in the crockpot like it was supposed to. I added mozzarella and Parmesan cheese to give it a little heft and improve the flavor. My husband liked it enough to take the leftovers with him to work.
If I make it again, I will make the following adjustments:
- Omit the salt or use low-sodium chicken broth.
- Increase the amount of mirepoix, and sauté it before adding it to the crockpot.
- Substitute cream for the evaporated milk.
- Thicken the soup on the stove instead of in the crockpot.
- Chop the spinach.
