Didn't use cheddar as I'm not a fan of it but kept all other ingredients. Must say was quite tasty and simple to do. I added a bit of chilli for heat and this was definetely one of those that should be eaten on a cold day "by the fireplace" kind of soups really confortable food with a side of toasted bread. But remember this recipe is far from being "low cal or healthy" which is what we sometimes assume of soups. Non the less pretty great and will do again.
