Really good, and it felt good to eat such a healthy dish. Great way to eat tofu for people who don't normally love it (like me & hubby lol). The alterations I made were using quinoa instead of brown rice, a red bell pepper instead of red cabbage and mixed greens instead of bok choy. Adding avocado would also be delicious! Only comment is that it's a lot of food, I felt like I was eating forever lol. A half portion would be enough for me.
